Just as flavorful as a New Orleans Style Hot Tamale; full of that "punch & kick"
but much simpler to create and extremely LESS time consuming.

The Tamale Ball is great to serve at parties and gatherings because
it's similar to cocktail meatballs that can be served with a toothpick.
Tamale Balls
TAMALE BALLS by Rami Parker
adapted from her New Orleans Style Hot Tamale Recipe
Yields: 100-150 approx. 1" balls (depends on size)
Prep Time: 30 min or so
Cook Time: 60 min - 4 hours (depends on method)
INGREDIENTS
Tamale Balls:
1.5 lbs. ground chuck
1.5 lbs. ground pork
1 envelope of Taco Seasoning (original)
3 oz. tomato sauce
3 oz. enchilada sauce
2 tsp. granulated garlic
2 cups of creole seasoning mix (1 large onion, 1-2 large bell peppers, 3-4 stalks of celery)
1/2 cup chili powder
1/8 cup cumin
3/4 tsp. paprika
2 tsp. cayenne pepper
2 tsp. salt
1/2 cup flour
1.5 cup yellow corn meal
Sauce:
11 oz. tomato sauce
13 oz. enchilada sauce
2 tbsp. chili powder
2 tsp. cumin
2 tsp. salt
1/8 tsp. paprika
2-4 cups of chicken broth (use 2 and if more is needed add accordingly)
DIRECTIONS:
Mix together ingredients for sauce and set aside
Mix dry seasoning ingredients for tamale balls and set aside
In food processor, chop fine/mince: garlic, onion, celery, and bell pepper; set aside
In a large bowl, blend meats together
Add tomato and enchilada sauces to blended meats and blend together
Add minced seasoning to meat mixture and blend (I add half and blend followed by the remaining half and blend)
Add dry seasoning to meat mixture and blend well ( again I do this by adding half at a time as I do the minced seasoning mix)
Form small balls (about 1") and layer into a large roaster or crock pot (I use crockpot)
Gently pour sauce over tamale balls
Do not stir!!!
Using roaster, cook on medium heat for 50-60 min, covered
Using crockpot, cook on high 4-6 hours or until tamale balls or done (Can be placed on warm setting until ready to eat)
